Breakfast Biscuits by Jan:
*(I use a bowl given to me by my mother-in-law)
Preheat oven to 400* Bake for 15-20 minutes
In a bowl place 4 cups of regular flour,
3 Tablespoons of baking powder
1 Teaspoon of salt
2 Tablespoons of white granulated sugar
Lightly combine these ingredients
Add and with a pastry tool cut in thoroughly,
2 heaping Tbsp. butter
2/3 cup shortening(Criso)
The mixture should look like a bowl full of pea size objects and very crumbly when you have finished cutting in the shortening.
Add and lightly fold/stir into the above
1 1/2 cups of 2% milk/buttermilk(your choice)
*Add any additional flavours such as cranberies, blueberries or cheese.
With your hand, gently gather up the ingredients and turn out onto a floured board.
It should resemble somewhat of a large ball of dough.
Gently form it into a neater ball and take a flour dusted rolling pin and gently roll the ball down into a THICK pancake and take a round shaped cookie cutter and cut out your biscuits. You can and should be able to use all the dough if you manipulate the last pieces into a free-style biscuit(This is the one my husband get to test when they are finished baking.)
Serve while still warm with butter and enjoy.
